LET'S WRITE THE MAGIC OF THE HOLIDAYS TOGETHER AT LE BAYADÈRE

At Hôtel Elysia, we believe that the festive season is not just a period on a calendar, but a story being written, a memory being created. It is a journey of flavors, warmth, and wonder.

This year, our restaurant Le Bayadère invites you to compose this story with us, through three gourmet chapters designed to celebrate every moment of the end of 2025.

Le Bayadère's festive menus are orchestrated by our talented Chef Khalid Mansour. True to his philosophy, the Chef—whose eco-responsible commitment has been recognized with the Ecotable certification—has composed a culinary score that celebrates local and seasonal produce.

 

The Enchanted Prelude – Our Christmas Tea-Time

 

Our story begins with a timeless break, a bubble of sweetness that acts as a prelude to the festivities. From December 4, 2025, to January 4, 2026, we open the doors of the Salon Bambou for our Christmas Tea-Time, a daily rendezvous between 3:00 PM and 5:30 PM.

Allow yourself to be enveloped by the atmosphere: the afternoon is fading, the light is dimming, and the scent of a steaming hot drink invites you to daydream. This is the moment when the softness of a scone, freshly served with cream and jam, meets the wonder of a selection of Christmas pastries that whisper childhood memories. A moment of confidence and indulgence, balanced by delicate finger sandwiches.

This interlude is offered in two elegant versions:

 

  • Le Goût-Thé Bayadère (€32): The promise of a complete and comforting selection, accompanied by the hot beverage of your choice.

 

  • Le Goût-Thé Elysia (€46): The same invitation to sweetness, magnified by the addition of a glass of Champagne for a sparkling note under the gilded decor of the Hôtel Elysia.

 

The Vibrant Heart – Our 2025 Christmas Lunch

 

December 25 is not just a day; it is the vibrant heart of our season, a sanctuary for tradition and family sharing. For this moment of such gentle solemnity, our Chef Khalid Mansour has imagined a culinary symphony at €115 per guest, a true manifesto of refinement.

This sacred moment will open with a spark of joy: the crystalline effervescence of a glass of Champagne Barons de Rothschild Tryptique 2018. Let your senses then be draped in the smoothness of our Foie Gras from Dupérier, prepared semi-cooked, semi-smoked, an earthly delight caressed by the amber sweetness of quince paste. Then, the very soul of Christmas is revealed on the plate with the majestic Capon stuffed with chestnuts, that comforting classic, haloed by a delicate consommé and accompanied by the earthy tenderness of woodland mushroom gnocchi.

This exceptional chapter will find its sweet climax in the magnificent Bûche de Noël (Yule Log), a final work of art signed by our accomplice, the renowned pastry chef Carl Marletti.

 

The Grand Finale – Our 2025 New Year's Eve Dinner

 

For the grand finale, as the hands approach "midnight," we invite you to a dinner of rare sensory richness to welcome 2026.

On December 31, the New Year's Eve Menu at €320 per person is a vibrant symphony that illustrates the inventiveness and technical mastery of our Chef Khalid Mansour.

This nocturnal journey will begin with the joyous clinking of Champagne Barons de Rothschild Tryptique 2018, a prelude to a trilogy of appetizers where the precious Carabineros Carpaccio, the finesse of the ratte potato and caviar tartlet, and the noble earthiness of the celery and truffle Mille-feuille meet.

The dinner then gathers momentum, celebrating the treasures of the sea and the land: from the nobility of the Abalone candied with seaweed caressed by a citrus sabayon, to the delicacy of the Lobster tempered in butter and its Jerusalem artichoke terrine. These precious dishes reflect the Chef's dual requirement: culinary excellence combined with a profound environmental consciousness.

To close the year in beauty and lightness, a Vine Peach Declination will bring a touch of acidic freshness, before the majestic arrival of the "Douceur du Nouvel An" (New Year's Sweetness), a spectacular and exclusive creation by master pastry chef Carl Marletti, the crowning moment of this night of renewal.
