Chef and cuisine
The kitchen is led by chef Khalid Mansour, who took over at Le Bayadère in 2020 after working alongside chefs such as Bruno Verjus. His cooking focuses on pure, minimally processed ingredients, seasonality and very careful attention to the cooking.
The menu changes with the seasons and market availability. The market menu, served at weekday lunchtimes, changes daily.
In 2026, for example, the menu includes line-caught sea bream ceviche with makrut lime, artichoke barigoule with ricotta mousseline, wild mushroom ravioles in dashi broth, roast saddle of Basque Country lamb, herb-infused turbot with saffron beurre blanc and Normandy beef fillet with a reduced jus.
The restaurant holds two Écotable macarons. Écotable is a French label that recognises restaurants committed to sustainability: carefully sourced local produce and responsible cuisine.

Dietary requirements
Le Bayadère offers a vegetarian menu. Most dietary requirements can be catered for, including sugar-free, lactose-free and diabetic diets: please let the team know of any specific requirements in advance, when booking, so that they can confirm which permutations/items are possible.
The meat served at Le Bayadère is not halal.
The setting
Le Bayadère occupies an air-conditioned dining room at the heart of a Haussmann-era building in the 8th arrondissement. The decor pays tribute to the ballet La Bayadère and reflects the romantic spirit of the Hotel Elysia: mouldings, a glass roof, a library and a muted atmosphere.
Afternoon tea is served in the Salon Bambou, a bright, glass-roofed lounge separate from the restaurant. Later in the day, the more intimate bar takes over with its selection of cocktails, champagnes and spirits.
The restaurant does not have an outdoor terrace: guests are served in the dining room and, for afternoon tea, in the Salon Bambou.
The modern beige décor with refined background music provide a soothing atmosphere. Children are welcome, and small pets are accepted in both the restaurant and the bar. There is no time limit for guests at tables in the restaurant.
